That was what Mads said when I was gathering the materials to make the gingerbread madeleines. Throughout the fun, we narrated everything. Sometimes, she would just repeat what I said, and other times she just made stuff up as we went along. So cute! I let her do most of the mixing. I must say that I am not too fond of the smell of molasses. And why do they say “slow as molasses?” It poured quite easily!

What we used to make 12 servings*:

Butter for greasing the pan

6 tbsp very hot tap water

1/4 cup dark molasses

1/2 tsp baking soda

2 tbsp unsalted butter, softened

1/4 firmly packed light brown sugar

pinch of salt

3/4 tsp ground ginger

1/4 tsp ground cinnamon

1 large egg yolk

1 tsp baking powder

1/2 cup + 2 tbsp unbleached all-purpose flour

The process:

1. Preheat oven to 375 degrees.

2. Grease a 12-cavity madeleine pan with butter.

3. Stir the hot water, molasses, and baking SODA in a small bowl. Set aside.

4. Combine the softened butter, brown sugar, salt, ginger, and cinnamon in a medium bowl and mix until smooth (an electric mixer was recommended, but I don’t have one)

5. Add the egg  yolk and beat (with electric mixer) until well incorporated.

6. Stir in the molasses mixture you set aside earlier.

7. Stir in the baking POWDER, then the flour.

8. Spoon batter into cavities of madeleine pan.

9. Bake until the madeleines are well risen (9-10 minutes). Remove the pan from the oven and immediately invert onto wire rack to cool. Serve warm or at room temperature. Best enjoyed on the day they’re baked.

A few comments:

Today was my first time ever making them. I think they turned out quite flavorful, but not cohesive enough. I was impressed that I had just enough batter for 12 cavities. Another thing is I did not know how to remove them. I also wonder if I was supposed to just invert the pan and let them cool and then remove them after they’ve cooled down or vice versa.

I LOVE madeleine cookies (we spell Mads full name as such). I tried my first one when my mother-in-law brought me a few after my daughter was born . I had seen them at Starbucks, but never wanted to pay the price for them. Ok, once I took I bite, I still didn’t buy them at Starbucks, but would find them at Costco and supermarkets for better prices. Then my mother-in-law baked her own one summer and I’ve been pining for my own pan. I finally got one this winter and was happy that Lauren Chattman’s Dessert Express has a few easy recipes.

Devil’s Den Preserve

This weekend was pretty laid back; we went to Mads’ soccer class and then to Compo Beach yesterday. Today, we stopped by the Farmers’ market in Georgetown before going hiking in Devil’s Den. We had ourselves a picnic with the BEST bread from Wave Hill Breads.

In the evening, we went to Toozy Patza & Jazzeria for pizza and jazz. The events calendar said the jazz starts at 6, but when we got there at 6:10, there was just a guitar case standing by. Yes, there was a couple eating in the musician’s spot, and when they left, the poor guy had to sweep his own floor, move the tables and chairs out of the way, get his own drink and tips urn. Weird! When all that was done, it was close to 7 and my kids were already getting restless after 3 songs, so we had to go. On a good note, I LOVE their “Jazz pizza,” which has roasted garlic, ricotta, mozzarella, broccoli, and spinach (an opened calzone is what my husband calls it). It was sooooooooooo good, especially when it’s piping hot. Hope you had a nice weekend!

Lemon Cake

Mads found a lemon cake recipe in her High-Five mag and told me she wanted to make it, so we did. It’s really simple and it’s soooooo good! A great one to involve a toddler – I had her squeeze the lemon and help with the mixing.

Prep:
- spray 8′ cake pan with vegetable oil spray or spread butter on the pan
- preheat oven to 350 degrees 

What I used:
1 cup sugar
2 eggs
1 lemon
1 cup milk
1 and 3/4 cups flour
2 tsp baking powder
1/2 cup canola oil (changed from olive oil)*

Process:
1. Mix the sugar with the eggs until the mixture is all yellow
2. Squeeze the lemon and add the juice to the mixture. Add the milk and stir mixture until smooth
3. Add the flour and baking powder and stir until it is no longer white.
4. Stir in the oil until it is well blended.
5. Pour the mixture into the pan and bake for 35 min or until it is golden brown.

*When we made it with olive oil, the cake was too dense. With canola oil (or vegetable oil, but we can’t use that in our house) it is just right.

‘Cuz the more you know…

The more you Kohl’s and the more holes I’ll have in my wallet. Well, I forgot my 15-20% off coupon today, but I went in anyway. Figured I’d still be saving. The nice thing is, I was hounded by the salesgirl to complete a survey and I got a 15% off coupon in return. It was funny because at some point I could not understand her because of her accent; even she admitted it. I have a thing with accents; I can’t understand them. So I read the questions to myself. Most of them are about the fitting rooms, which I usually do not get a chance to visit because I’m with my infant strapped to me or he refuses to stay in the stroller. In any event, I spent $74.66 and it says I saved a total of $163.25; that justifies the trip, right?

1st Memorial Day Weekend in CT

So busy! It kicked off with Friday evening’s recital rehearsal for my daughter. Then my cousin and her boyfriend made it (ON TIME) to the house and we had a quick bite to eat (Peter’s Market has good food!) before we got Maddy ready for the recital at Wilton High School. WZR survived the 3 hours of dances (most of them). Maddy did well.

Afterwards, we went to the Weston Fair and went on rides. Maddy had a blast! When we got home, the grill was fired up and we had steaks and lamb chops for dinner. Sunday kicked off with a trip to Compo Beach (very quiet) and then to Bombay Cuisine for an excellent spread for a lunch buffet. We said goodbye to my cousin and boyfriend, and the kids took naps. Although it thundered and rained a little, Maddy and her daddy went back to the fair to go on more rides. It was a late night for everyone. Monday morning, we rushed to the meeting place for the town parade and went nuts looking for the Weston Soccer Club banner.

IMG_3770Found it and waited for the parade to start. Turns out most of the town marches in the parade, so I joined them with WZR. We didn’t wait for the food and refreshments, courtesy of the Fire Dept (all volunteers), but did walk through the fair, played at the playground, and then got in the car. No nap for Maddy, but we did get ready for the Joyces for a play date and bbq. A good time was had by all, but I think we need a vacation now.

Banana Pancakes

I borrowed a recipe from the bigoven.com app on my iPhone for basic pancakes and modified it. Came out great!

To make 4-6 servings, I used:

Dry ingredients:
2 cups flour
2 tsp baking soda
4 tbsp sugar (not 1 cup)

Wet ingredients:
1 and 1/2 cups milk
4 tsp vanilla
2 tbsp canola oil (not 1/2 cup melted butter)
2 eggs
2 bananas mashed*

The Process:
1) Mix all the dry ingredients well in a large bowl and set aside
2) Mix the wet ingredients well in a separate bowl (adding bananas last)
3) Add the mixed wet ingredients gradually into the large bowl with dry ingredients
4) Let mixture sit for about 15 minutes
5) Heat griddle to about 325 degrees and melt butter, then pour batter into circles and flip when pancakes start to bubble.

*I peel the bananas, put them in a ziplock bag, seal it and let my daughter mush them before adding.

Cool beans! Found out that I could keep pancakes warm in a baking pan covered with foil. Poke a few holes to keep them from getting sticky.
